Broccoli Curry


Ingredients:

1 small head of broccoli, cut into florets
1 potato, cubed
2-3 tsp oil
½ tsp urad dal
½ tsp black mustard seeds
1/2 tsp cumin seeds
1 cup onion, chopped
1/2 tsp cumin powder
½ tsp garlic paste or minced garlic
¼ tsp turmeric
salt

Method:

1.Steam the broccoli on the stovetop or in the microwave with 1 TB water for 6 minutes. You want it to be soft but firm.
2.Boil the potato until it is cooked through, but not soft enough to mash.
3.Get out your skillet and heat the oil until sizzle-hot. Add the urad dal and black mustard,cumin seeds, and cook until the dal is light brown.
4.Now add the onion and potato cubes. Cook until the onion is golden-brown.
5.Add the garlic paste, cumin powder and turmeric. Cook for a minute.
6.Add the broccoli and salt to taste, and cook about 5 more minutes. Done.
