Bhindi Curry(lady'sfinger)


Ingredients:

1/4 kg fresh tender lady’s finger, chop into 1″ inch pieces
1/2 a tomato chopped fine
1 onion chopped fine
2 cloves garlic chopped fine
1 teaspoon cumin
1 teaspoon coriander powder
1 teaspoon chili powder
1/4 tsp garam masala pwd (optional)
1/2 tsp kasoori methi (dry fenugreek leaves)
2 teaspoons of chopped chilies
Salt to taste
1 tablespoon olive oil

Method:

1.Heat oil in pan and toast cumin seeds. Add onions and brown.
2. Add garlic when onions are almost cooked. Next add coriander powder, chili powder, chillies and stir.
3. Then add Bhindi and cook on medium heat stirring for about 3 to 4 minutes. Add tomato and stir.
4.Add kasoori methi, sugar and lemon juice. Combine well and adjust salt. Turn off heat.
Garnish with fresh coriander leaves and serve with hot rotis or rice.
