Boppai (Papaya) Halwa



Ingredients:

2 cups ripe Boppai (papaya) gratings
2 cups Ghee
1 cup Sugar
2 tsps Elachi (cardamom) powder
¼ cup Kaju (cashews)
¼ cup Kishmis (raisins)
a pinch Saffron
1 cup milk

Method:

1.Make cashew into small pieces. Fry the cashews in ghee and keep aside.Boil the milk for 15-20 minitues in medium heat until gets thick.Heat one tbsp ghee in a pan, add the papaya pulps and saffron, fry till the smell vanishes.
2.Cook it in medium heat and stir occasionally for 5 minutes.Now add the milk and boil it until milk evaporates,then add the sugar and stir continuously in low heat.
3.Now add the remaining ghee and Cook till it leaves the sides of the pan. Add elachi powder and kishmis and mix well. Pour in a greased plate, cut into neat pieces and garnish with cachew nuts.
