Palak/Spinach Pakora


Ingredients:

16-20 fresh spinach leaves
¾ cup gramflour (besan)
1½ tsp red chilli powder
½ tsp turmeric powder
1 tsp coriander powder
Oil to deep fry
3 medium onions (sliced)
4-5 green chillies (paste)
1 tsp garlic paste
1 tsp garam masala
Salt to taste

Method:

1.Wash, clean and cut the palak finely. Sift the besan and add the palak, onion, green chilli paste, garlic paste, garam masala, salt, red chilli powder.
2.Mix all the ingredients together till the palak leaves a little moisture. After that, you can add a sprinkling of water if the batter is not smooth and wet. If it is smooth, don't add water.
3.Heat oil to smoking point and let it smoke for 2 min. Turn off the flame and let the oil temperature reduce for 2-3 mins. Turn on the flame and Dip each spinach leaf in the batter and deep fry in hot oil till golden brown and crisp.
4.Fry 5-6 pieces at a time till golden brown and crisp on both the sides. Drain on absorbent paper.
Serve hot with tomato sauce or green chutney.
