
Ingredients:
Tamarind 200 g
Ginger 200 g
Jaggery 100 g
Coriander seed powder 1 tsp
Cumin seed powder 1 tsp
Chilli powder 4 tsp
Oil 200 g
Salt taste
Method;
Proportions of the first three items are to be chosen depending on the taste required - sweet or sour or gingery. I prefer a dominant ginger taste. Initially the recipe may be tried with smaller quantities.
Soak tamarind in half a cup of warm water and extract the pulp. Grate jaggery and cook along with tamarind pulp with little water. Scrape & cut ginger into thin slices Fry in a small quantity of oil and grind to a smooth texture. Add ginger paste,chilli powder coriander & cummin seed powder and salt to tamarind-jaggery. Mix thoroughly. Finally temper it with red chillies, curry leaves and garlic fried in a small quantity of oil. The chutney is ready for use.
