
Ingredients:
Rice 1 cup
Grated coconut fresh 1 cup
Green chillies 3
Broken Red chillies 3
Mustard seeds 1/2 tsp
Urad dal 1/2 tsp
Chana dal 1/2 tsp
Cumin seeds 1/2 tsp
Curry leaves 4
Hing/ Asafoetida a pinch
Turmeric Powder a pinch
Salt to taste
Oil 1 tbsp
cashew nuts- as required
Method Of Preparation:
1.Grate coconut and take out 1/4 of it and keep it aside. Take cocnut milk from the remaining coconut by grinding it in mixie with some water and filtering it .You will get fresh coconut milk .
Wash rice and fry it a little cook it with coconut milk and some water.Add salt to it.
2.Remove stems, wash and slice green chillies vertically once.
3.Heat oil in a pan, add sliced green chillies and chana dal.
After few seconds add broken red chillies, urad dal, mustard seeds, cumin seeds, curry leaves, hing and salt.
4.When seeds start to splutter and dal turns light brown , remove from heat.
Add grated coconut and turmeric powder/ haldi.
5.Add cooked rice to it and mix it well. Add fried cashew nuts .Coconut rice is ready.
Serve it hot with any raita or with aloo kurma .
