
Ingredients:
2 Eggs
3 medium sized onion
2 medium sized tomato
1 green chili
1 tsp cumin seeds/cumin powder
1 tsp ginger-garlic paste
1/2 tsp turmeric
1/2 tsp red chili powder
1/2 garam masala
1 cup water
salt as per taste
oil for frying
coriander leaves finely chopped for garnishing
Method:
1.Boil eggs,peel them and keep aside. In a pan take one tsp oil and fry both the eggs till its upper skin becomes a little brown in color. Let them cool down and than make small cuts with the help of knife in it. Keep them aside till curry is ready.
2.Grind onion and tomato with green chili separately. Heat oil in a pan and add cumin seeds/powder. Once it started crackling add onion paste & ginger-garlic paste and fry for 2-3 min. To this add tomato paste and fry until the oil separates.
3.Now add all dry spices like turmeric powder, red chili powder and garam masala. Fry for another 2 minutes. Add 1 cup of water and eggs and let it boil for another 7-10 min by covering the pan in simmer. Add salt as per taste.
4.Garnish it with finely chopped coriander leaves and serve hot with roti or rice.
