
1/4 cup Vegetable or Canola Oil
1 1/2 cups Onions, finely chopped
1 Tbl Minced Garlic
2 slices Ginger
1 Bay Leaf
4 large Potatoes, Cut into 1.5 inch squares
1 cup Frozen Peas
1/2 cup Tomato Puree or paste
1 1/2 tsp Garam Masala Spice
1 1/2 tsp Paprika spice
1 tsp Salt
2 Tbl Fresh Cilantro, chopped
Method:
1.Heat oil and add the cumin seeds and the bay leaves. When the seeds begin to splutter.
2. add the onion, garlic and ginger paste and garam masala spice and sauté till oil separates.
3.Add the tomato puree, turmeric, salt, garam masala, red pepper and the coriander powder, and stir-fry till oil separates. Add the peas, potatoes and the green chillies and sauté over high heat for 5 minutes.
4.Add 2 cups of water,bring to a boil lower the heat and simmer, for further 10-15 minutes.
garnish,Serve with Cooked Rice and/or Indian Bread
